This is a traditional apron worn by the counter worker in an old fashioned soda fountain, a “soda jerk”. When one side gets dirty, you can flip it over or reverse it up to 4 times and you have a clean side. It’s like wearing 4 aprons before you have to wash it. I’m sure that was the appeal to the soda jerk just like it is today.
